Vegan
Gluten Free Chocolate Cake
(No eggs,,dairy,or gluten)
250 gr flour gluten free mix (potato, corn,
tapioca)
350 gr brown sugar
250 gr vegetable shortening
65 gr cocoa powder
1 teaspoon Baking powder
a pinch of salt
300 – 400* ml rice milk
1 teaspoon of Vanilla
1 cup of Walnuts
1 cup coconut flakes
Using the mixer beat the sugar together with
the vegetable shortening.
Add the flour, cocoa, baking powder, salt,
vanilla and mix well to combine with sugar and butter.
Add *rice milk and beat until the mixture is
creamy but not running.
Crush some walnuts by hand and add them to
the mixture. Combine them gently
Grease a pan with butter and add some flour
on bottom and sides or use grease proof paper.
Preheat oven and bake at 170 - 180oC for 25
– 30 minutes.
Tips
*Use as much milk as needed to achieve the
right consistency. The mixture should be creamy but not running.
You can add some coconut flakes that were
soaked before in the rice milk for extra flavor.
